Grilled Salmon with Lemon-Herb Butter
 
 
 

 
 

1/4 cup butter or margarine, melted
2 tablespoons fresh lemon juice
2 tablespoons chopped parsley
1/4 teaspoon dill weed, rosemary leaves or marjoram, crushed (your choice)
 
1/4 teaspoon salt
1/8 teaspoon coarsely ground pepper
8, 3/4 to 1-inch thick fresh salmon steaks or fillets

Combine all ingredients except salmon. Baste salmon steaks with butter mixture on both sides. Grill over medium-hot coals, turning once until fish flakes easily with a fork. Baste several times during grilling. Makes 8 servings.

Broiler Instructions:

Line broiler pan with foil and place salmon fillets on the well-greased rack. Baste salmon with herb butter. Broil 4 inches from heat allowing 10 minutes cooking time per inch thickness. Do not turn salmon. Baste several additional times during broiling.

Refrigerate any leftovers.
