1 tablespoon olive oil
1 pound pre-cooked chicken
3/4 cup pearl onions, thawed from freezer
1 1/4 cup baby broccoli florets, thawed from freezer
2 cups pre-cooked brown rice
In a large skillet over medium high heat, heat the oil. Add the broccoli and pearl onions and saute' for 5-7 minutes or until vegetables start to turn a golden brown, stir occasionally.
Add the chicken and heat for 5 minutes.
Move chicken and vegetables to one side of the skillet. Add rice to skillet with a small amount of water and heat for 2 to 3 minutes longer. Serve the chicken and vegetables over cooked rice.
Recipe yields 4 servings.
Serving Size: ½ cup vegetables, ½ cup rice, 4 ounces chicken
